Spanish Stew Or Caldo Gallego

Ingredients:

  • 1 lb. medium- sized white beans
  • 2-1/2 quarts water
  • 1 meaty ham bone plus 1 smoked pork hock
  • i sometimes substitute the ham and pork hock with beef short ribs.
  • 1 bunch collard greens , mustard greens or spinach
  • salt to taste but it should be salty enough.

Directions:

  1. Rinse beans.
  2. Cover with 6 cups water in a large kettle, soak overnight.
  3. When ready to cook, add additional 1 quart water, the salt pork and ham bone.
  4. Bring to a boil.
  5. Cover, reduce heat and simmer about 2-1/2 hours or until beans are tender.
  6. Add potatoes and collard greens.
  7. *If you are using spinach. add later with the chorizos.
  8. Simmer for approximately 25 - 30 minutes.
  9. Cut chorizos in 1 inch pieces.
  10. Add to beans and cook 10 min. longer.
  11. Taste and add salt if necessary but it shouldl be salty enough.
  12. Remove ham bone and pork hock.
  13. Cut off meat and return meat to stew.
  14. Serve in soup bowls with a garnish of fresh parsley / cilantro or chives, chopped.
  15. The longer this stew sits the more flavorful it becomes.
