I have no idea where I got, how long I've had it, or even if I've ever tried it. However, it sounds as if it would be great. When I do make it, I will change this description, and my current estimates of number of servings and prep/cook time. For now, I've estimated just about everything. Also, since I don't like rice (except for Chinese fried rice), I'm saying this could be served over pasta as well.
Ingredients:
1 lb large shrimp, shelled and deveined
1 tablespoon mrs. dash seasoning mix
1 tablespoon unsalted butter
1 garlic clove, minced
1 tablespoon cooking oil
1/2 cup spanish onion, thinly sliced
3 large tomatoes, chopped
1 tablespoon mrs dash's extra spicy seasoning
Directions:
1. Cook the rice or pasta, whichever you prefer, while preparing the shrimp.
2. Wash and dry shrimp, and sprinkle with Mrs. Dash seasoning blend.
3. Heat butter to bubbling in a to large skillet,.
4. Add garlic and shrimp to skillet, and sauté for 3 – 4 minutes or until shrimp are opaque, at this time, do not cook until pink.
5. Remove shrimp and as much of the garlic as possible and set aside.
6. In the same skillet, add cooking oil to the butter, add onion and sautee until tender.
7. Add chopped tomatoes and season with Mrs. Dash Extra Spicy to taste.
8. Continue cooking over moderate heat, stir occasionally, for 3 – 5 minutes.
9. Add shrimp and garlic and heat for one minute, or until shrimp are pink.
10. Serve over rice garnished with fresh lemon slices, or over pasta.
