I got this recipe from a cowboy cookoff contest. It is easy, and good.
Ingredients:
1 onion, chopped
1 tomato, chopped
1 -2 clove garlic, minced
1 can green chili, drained
1 teaspoon bacon drippings, or cooking oil
1 cup long-grain rice
2 cups water
salt and pepper
Directions:
1. Saute rice in bacon drippings until rice is browned.
2. Add onion, tomato, garlic, green chiles, and water.
3. Simmer covered until water is absorbed.
4. Fresh chopped cilantro may be added just before serving.
