Spanish Rice

Home made Mexican rice.
Ingredients:
1 c rice
1 medium onion, chopped
1 medium green bell pepper, chopped
2 t margarine (i use nucoa - does not burn) or butter crisco
1 small can tomatoe sauce
2 c water or more if needed
1 can ortega chili pepper
salt and pepper to taste, if desired
Directions:
1. Using a large skillet, brown rice in margarine with onion and bell pepper.
2. Add the remaining ingredients and stir well.
3. Bring to a boil, then lower heat to simmer.
4. Cover and simmer 20 minutes or until liquid is asorbed and rice is done.
5. Add more water if needed.
6. Add salt and pepper when done, if desired.
