This recipe came from my husbands grandmothers recipe card file. Its pretty old. We all love it, and I hope you do too. You can play around with this recipe and add what you want to suit your tastes. I prefer it as it is.
Ingredients:
1 lb ground beef
1 cup onion, chopped
1/2 cup green bell pepper, chopped
1 medium garlic clove, minced
1 tablespoon chili powder
4 cups v8 vegetable juice
1 cup rice, uncooked
1 teaspoon salt
Directions:
1. Brown beef in skillet.
2. Add onion, pepper, garlic and chili powder.
3. Cook until onion and pepper are tender.
4. Add remaining ingredients.
5. Bring to boil.
6. Cover; cook over low heat 20 minutes or until liquid is absorbed.
7. Stir occasionally.
