A tasty side dish that is easy to make.
Ingredients:
1 lb small red potato, quartered
1 1/2 cups diced onions
1 cup diced green pepper
1/2 cup water
1 tablespoon olive oil
1 teaspoon chicken bouillon granule
1 cup chopped tomato
1/2 teaspoon dried oregano
Directions:
1. Place potatoes in a saucepan and cover with water.
2. Bring to a boil, reduce heat, cover and cook until tender.
3. In another pan, combine the onions, green pepper, water, oil and bouillon and bring to a boil.
4. Reduce heat, cover and simmer until vegetables are tender.
5. Drain potatoes and add onion mixture, tomatoes and oregano.
6. Stir gently to coat.
