Tomato and Mushroom Sauce for Omelets
Ingredients:
2 tablespoons olive oil
1/2 cup scallions - finely chopped
1/2 cup green pepper - finely chopped
1 clove garlic - finely chopped
15 ounces diced tomatoes
8 ounces mushrooms - sliced
1/2 teaspoon dried oregano
1 salt and pepper to taste
4 ounces green peas
Directions:
1. Saute green pepper, green onions, and garlic until tender
2. Add tomatoes and seasonings
3. Add mushrooms and simmer to reduce liquids to a thick sauce
4. Add peas
