~Paired together...they do a nice dance~
Ingredients:
1 1/2 cups chorizo,diced
1 cup peaches,diced...your going to want fresh
2 green onions,sliced...top included
1/2 to1 teaspoons pimenton...depending on how smoky you like it
2 teaspoon salt
1 teaspoon pepper
several generous handshake splashes of tequila
several generous handshake dashes of peach bitters
1 package wonton wrappers
good oil
combine everything except the wrappers.
mix throughly.
begin, by wetting the perimeter of the wrapper with your finger dipped in tequila.
dollop about one tablespoon of the mixture onto the wrapper.
take one corner of the wrapper and fold triangularly to the opposite corner.
lift,with both hands,and crimp the edges with your fingers,making very sure mixture stays inside.
heat oil to 350 degrees,place wrappers in wire basket,lower into the hot oil.
they will start cooking immediately.
after a minute they should turn a dark golden brown.
remove from oil and place on paper towel lined platter
continue cooking,then allow to cool for 5 minutes.
placing them on a nice platter.
'serve with cool dipping sauce and drink
Directions:
1. ~The Cool Dipping Sauce~
2. 1/2 cup Sour Cream
3. Jucie of 1/2 Lime
4. 1/2 Clove of Garlic
5. Salt and Pepper to taste
6. 1/4 teaspoon Pimenton (smoked paprika)
7. Mix very well.
8. ~The Drink~
9. 2 oz. Reposado Tequila
10. 1/2 oz. Lillet Blanc
11. 1/2 oz. Dubonnet Rouge
12. 1/2 oz. Benedictine
13. A few dashes of Orange Bitters
14. 1/4 oz. Fresh Lemon Juice
15. Lemon peel
16. Shake for a few seconds in a ice filled shaker.
17. Strain into chilled glasses,toss in the lemon peel.
18. ~ IT TAKES TWO TO TANGO...and with these spicey little numbers this drink fits right into step..for me,the dipping sauce is a must~
