Serve this dish warm with tortilla chips and it will be the hit of the party. This recipe makes 2 9-inch pie baking dishes. I recommend the glass type
Ingredients:
2 or 3 tsp chopped jalapeno peppers (more if you like more zing)
1 medium onion, chopped
2 tbsp vegetable oil
1 4oz can chopped green chillies
2 fresh tomatoes, chopped
1 10oz package chopped frozen broccoli
1 1/2 tbsp red wine vinegar
1 8oz package cream cheese softened
2 1/2 cups grated monterey jack cheese
1 cup half and half
salt and pepper to taste
paprika (optional)
Directions:
1. Place oil in frying pan and heat.
2. Add peppers, onions, chilies and tomatoes.
3. Saute until onions are tender.
4. Remove from burner. In a large bowl mix softened cream cheese, half and half, grated Monterey Jack cheese, frozen broccoli, vinegar, and salt and pepper to taste.
5. Mix well until there are small lumps of cream cheese.
6. Add sauted vegetables.
7. Pour into a greased baking dish and bake at 400F degrees about 20 minutes.
8. You may sprinkle paprika on top for richer color.
9. Dish will firm upon standing.
