I love me some tzaziki! i could put it on just about anything, but it goes splendidly with crunchy, cheesy spanakopita :) Thanks to my mom for introducing me to this creamy goodness!
Ingredients:
for the spanakopita
1 (16 oz) package wonton wrappers
1 (8 oz) brick cream cheese
1/2 cup feta cheese
about 40 spinach leaves
1 small white onion
1 large garlic clove
olive oil
salt & pepper
for the tzaziki
1 32 oz container greek yogurt
1 large cucumber, peeled
1 large garlic clove
2 tbsp lemon juice
salt & white pepper
Directions:
1. for the spanakopita
2. Preheat oven to 400 degrees Fahrenheit. Line some baking sheets with aluminum foil or parchment paper, set aside.
3. Mix cream cheese and feta together in a bowl, set aside.
4. Heat olive oil in a saute pan. Finely chop onion and garlic, add to pan. Thinly slice spinach leaves, discarding stems, and add to pan. Cook until spinach begins to wilt & onions are translucent. Season with a bit of salt & freshly ground black pepper. Pour spinach and onions into bowl, & mix well with a spoon.
5. Lay out the wonton wrappers on a large cutting board, or any clean workspace, and brush edges with olive oil. Put a teaspoon of the cheese-spinach mixture in the middle of each wrapper, and fold once until opposite corners are touching; forming a triangle. Brush liberally with olive oil and arrange on baking sheets so that they are not touching. Bake for 15 minutes, or until golden brown.
6. For the tzaziki
7. Pour yogurt into a large bowl.
8. Finely chop cucumber & garlic, mix into yogurt.
9. Add lemon juice, and season with salt & white pepper, to taste. Enjoy!
