This light and healthy side option is made with fresh herbs and is great paired with fish or chicken.
Ingredients:
2 1/2 cups cooked spaghetti squash
1/2 cup finely chopped fresh parsley
1/4 cup minced red onion
2 tablespoons finely chopped fresh mint
2 tablespoons finely chopped fresh cilantro
1 tablespoon fresh lime juice
2 teaspoons olive oil
1 teaspoon fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon black pepper
Directions:
1. Combine all the ingredients in a large bowl; toss with 2 forks. Cover and chill.
