Spaghetti Squash

One of my all time favorite sides, I make it at least once a week in the summer and more in the fall when squash is cheaper.
Ingredients:
1 spaghetti squash
1 clove garlic
1 tablespoon diced red onion
1 tablespoon diced red pepper
salt and pepper to taste
1/2 tablespoon butter or margarine
olive oil.
Directions:
1. Heat oven to 450f
2. Carefully split the squash in half and remove the pulp and seeds.
3. Rub inside of squash with oil, salt and pepper and place in oven.
4. Bake for around 30 – 40 minutes check after 35. Squash should be golden brown
5. When done pull from oven and let sit for 10 minutes. Using a fork scrape put the insides of the squash into a bowl.
6. Heat butter or margarine in a sauté pan and sauté onions and peppers for approximately 2 minutes; add garlic and sauté an additional 30 seconds.
7. Add squash and cook for 3-4 minutes add salt and pepper to taste
8. Eat and enjoy.
