Classic Italian tomato sauce with meatballs
Ingredients:
2 (28 ounce) cans crushed tomatoes
1 (28 ounce) can diced tomatoes
0.5 (28 ounce) can water
1 (12 ounce) can tomato paste
1 medium onion, chopped
1 green bell pepper, chopped
3 garlic cloves, minced
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon italian seasoning mix
1 teaspoon garlic powder
3 tablespoons dried parsley
3 tablespoons dried basil
3 tablespoons dried oregano
1/2 cup grated parmesan cheese
2 tablespoons olive oil
1 lb lean ground beef
1 lb ground pork
2 eggs, lightly beaten
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 cup dried parsley
1/3 cup grated parmesan cheese
1/2 cup dry italian seasoned breadcrumbs
1/2 teaspoon salt
1/4 teaspoon ground black pepper
olive oil (for frying)
1 (16 ounce) box spaghetti noodles, cooked or 1 equivalent fresh pasta
Directions:
1. Sauce: Begin cooking tomato products, water, and dry ingredients over medium-low heat until slightly bubbling and then reduce heat to low and continue simmering; meanwhile in a medium skillet, saute onion, green pepper, and garlic in olive oil until tender but not burned and add entire contents of pan including oil to tomato sauce. Simmer sauce for at least 3 hours minimum or more stirring occasionally until desired consistency and doneness. Do not undercook, else the tomato sauce will be overly tart.
2. Meatballs: Combine all dry ingredients in a large mixing bowl. Add in ground beef and pork and fold. Then add beaten eggs and continue folding until thoroughly mixed. Form into 1 meatballs and then fry in olive oil over med-high heat until browned on all sides. Drain cooked meatballs on paper towels and safely discard of used cooking oil.
3. Sauce & Meatballs: Add cooked meatballs to tomato sauce and continue simmering until finished. Salt, pepper, and sugar to taste before serving.
4. Serve tomato sauce and meatballs over cooked pasta of your choice; or cook pasta for one minute less of suggested cooking time; drain; and then add pasta directly to pot of cooked spaghetti sauce & meatballs cooking for about one additional minute. Remove from heat and serve,.
