A family favorite! Ingredients:
3/4 cup onion, chopped |
1 garlic clove, minced |
3 tablespoons olive oil |
2 (1 lb) cans tomatoes |
2 (6 ounce) cans tomato paste |
1 cup water |
1 tablespoon sugar |
1 1/2 teaspoons salt |
1/2 teaspoon pepper |
1 1/2 teaspoons dried oregano |
1 bay leaf |
4 dry bread, sliced |
1 lb lean ground beef |
2 eggs |
1/2 cup romano cheese, grated |
2 tablespoons parsley, chopped |
1 garlic clove, minced |
1 teaspoon oregano, crushed |
1 teaspoon salt |
Directions:
1. 1. Cook onion and garlic in hot oil till tender but not brown. Stir in the next 8 ingredients. Simmer uncovered 30 minutes; remove bay leaf. Add Italian Meat Balls (see below) and continue cooking about 30 minutes longer. 2. 2. Soak bread in water for 2-3 minutes, then squeeze out moisture. Combine soaked bread with remaining ingredients, mixing well. Form in small balls (about 20). Brown slowly in 2 T hot olive oil. Add to sauce, cook 30 minutes as directed above. |
