Cheap as chips...er beans! You have unlimited potential here in terms of flavour - try honey, or salt and vinegar, or even wasabi! No need to pay the crazy prices for a healthy snack now! This also works with any type of bean, my current favourite is kidney - they taste like fries! Read more ! Makes about 2 1/2 cups.
Ingredients:
1 cup dry soybeans
water
Directions:
1. In a large covered container, completely cover dried beans with water (you want a good 3 above).
2. Let stand overnight.
3. Preheat the oven to 350F and line 2 baking sheets with parchment.
4. Drain the beans and dry well on a clean kitchen towel. See Photo
5. Spread beans in a single layer on the sheets.
6. Roast for 1 hour, stirring every 10 minutes and rotating pans halfway through.
7. *NB: using beans other than soy means their roast times will vary. For smaller types (adzuki, for example) start checking at 45 minutes. Kidney and lima beans can take up to 1 1/2 hours.
