Soycoli and Ginger Stir-Fry |

This is a delicious recipe based on tofu and lots of nutrient-rich vegetables. Subtly flavoured with ginger and soy sauce, it is low in fat, high in protein and perfect for those days where you fancy something light, simple and nutritious. Ingredients:
125 g marinated tofu or 125 g smoked tofu, cut into triangles |
200 g broccoli, cut into small florets |
100 g shiitake mushrooms or 100 g chestnut mushrooms, diced |
1 red onion, cut into wedges |
120 ml vegetable stock |
1 tablespoon soy sauce |
1/8 teaspoon ginger powder |
1 pinch salt (to taste) |
1 tablespoon sesame seeds (optional) |
Directions:
1. Turn the stove on high and heat a teaspoon of sesame oil in a wok or frying pan. Alternatively, if you are watching your fat intake, you could lightly spray the pan with cooking oil. 2. Fry the onion and tofu for a couple of minutes before adding the mushrooms and mixing in the soy sauce. Allow to cook for 3minutes, stirring often. 3. Add the broccoli florets and pour in the vegetable stock. Stir well and cover. Reduce to medium heat and leave it to cook for a couple of minutes or until the stock has mostly evaporated. 4. Remove the lid, mix in the ginger and continue to cook for 30seconds. Turn off the stove and season to taste. 5. Sprinkle over some sesame seeds and serve immediately. |
