Make ahead and chill, easy to switch ingredients for what you have on hand
Ingredients:
16 oz. soybeans
2 lbs small red potatoes, cooked and quartered
3 tablespoons olive oil
2 tablespoons balsamic vinegar (or apple cider)
1 tablespoon dijon mustard
1 tablespoon splenda brown sugar blend
1/2 teaspoon black pepper
1 clove garlic, minced
1/2 red onion, chopped
Directions:
1. Cook potatoes and add soybeans to boiling water in the last 2-3 minutes
2. Whisk next 7 ingredients together
3. Combine all, chill overnight
