Southwestern Quinoa Salad

A bit spicy and packed with protein. Sometimes I add grilled chicken to make it a meal.
Ingredients:
1 cup quinoa, uncooked
2 cups water
1/3 cup chopped tomato
1/2 cup chopped celery
1/2 cup frozen corn, defrosted
1/2 cup canned black beans, rinsed and drained
1/2 cup red onion, thinly sliced
1/2 cup seedless cucumber, diced
1 chipotle chile in adobo
2 tablespoons light sour cream
2 tablespoons fresh lime juice
2 teaspoons chili powder
2 teaspoons cumin
3/4 cup fresh cilantro leaves
1/4 teaspoon salt
Directions:
1. Cook quinoa according to package directions.
2. Spread on a baking sheet to cool.
3. Mix cooled quinoa with vegetables and beans.
4. Blend dressing ingredients in blender until smooth.
5. Mix dressing with quinoa.
6. Chill and serve.
