Quick and easy low-carb lunch/dinner option. For non low-carb, top with tortilla strips and lowfat cheddar cheese.
Ingredients:
4 ounces chicken breast
1/2 tsp cumin
1 tsp pepper
1 tsp chili powder
1 cup swanson chicken broth
1/2 cup cilantro
1/4 cup chopped red onion
1/2 cup chopped red pepper
Directions:
1. Season chicken breast with cumin and pepper.
2. Pan sear on medium heat for 5 minutes on each side.
3. Chop cilantro, red onion, and red (or green) pepper.
4. Add to pan with chicken for final few minutes of cooking.
5. Add chicken broth and let simmer 5-10 minutes.
6. Enjoy!
