I love the taste of the Southwestern spices. This bean soup is very good.
Ingredients:
1 lb dry black beans, washed
6 cups beef broth or 6 cups beef bouillon
1 large onion, chopped
1 jalapeno pepper, seeded and chopped
1 garlic clove, crush
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon ground thyme
2 ham hocks
1 large tomato, diced
1/3 cup sour cream
Directions:
1. In crockpot combine All ingredients except sour cream and chopped tomato.
2. Cook on low about 10 hours or till beans are done.
3. Remove the hocks; cool and remove lean part of meat, discarding fat and bones.
4. Return lean part of meat to crockpot and reheat if needed.
5. Serve topped with sour cream and diced tomato.
