Southwest Chipotle Pork

An excellent Pulled pork recipe can be put on a bun or in a wrap. I usually use only 1 onion and 2 peppers. If you like spicy don't seed the chipotle peppers. I use 2 of them instead of 1. If you wish to do this on the stove use medium heat for 2 to 3 hours and mind to add water, as a pot lets moisture escape and a slow cooker does not.
Ingredients:
1 lb pork tenderloin
1 (14 1/2 ounce) can diced tomatoes, in italian seasoning (undrained)
2 medium onions, thinly sliced
1 large green bell pepper, thinly sliced
1 chipotle chile, in adobo sauce (seeded, stemmed, and chopped)
2 tablespoons ketchup
1 teaspoon cumin
1/2 teaspoon salt
8 flour tortillas
4 cups lettuce, shredded
Directions:
1. In a 3 1/2 Quart to 4 Quart Slow cooker. Spray with nonstick spray.
2. Place Pork Tenderloin in slow cooker (Fat side down) and top with Onions, Peppers, Tomatoes, and Chilies.
3. Cover and cook in slow cooker on HIGH for 4 hours. Or LOW for 8 hours.
4. -NOTE- If cooking stove top use medium heat for 2 to 3 hours and make sure to add water to keep moist.
5. With a slotted spoon, Remove the pork loin and pull apart using two forks. Once pulled, Return pork to slow cooker.
6. Add Ketchup, Cumin and salt. Mix well. Let cook on low for 10 minutes to blend flavors.
7. Meanwhile, Heat the tortillas.
8. With a slotted spoon, place 1/3 cup of the meat mixture on each of the wraps.
9. Top each with 1/2 cup of shredded lettuce. and wrap the tortilla like a burrito.
