Southwest Chicken Soup

I found this in my local newspaper's cooking section. It is different than some others in that it has hominy in it.
Ingredients:
1 onion, diced
1 red pepper, seeded and diced
1 jalapeno, seeded and diced
1 tablespoon vegetable oil
15 ounces hominy
15 ounces kidney beans
15 ounces black beans
16 ounces salsa (chunky)
32 ounces chicken broth
2 cups cooked chicken, shredded
1/4 cup cilantro, chopped
sour cream (to garnish)
Directions:
1. In a pot over medium heat, saute onion, pepper and jalapeno in oil until soft, about 7 minutes.
2. Add hominy, beans, salsa and chicken broth. Bring to a boil, reduce heat and stir in chicken. Cover and cook 5 to 10 minutes more until heated through. Stir in cilantro. Serve with more cilantro and sour cream if desired.
