Southwest Caesar Salad

Great Mexican Salad
Ingredients:
1/4 cup sour cream
1/2 cup olive oil
2 limes, juice of
2 tablespoons fresh cilantro, chopped
2 tablespoons dried ancho chile powder
1/3 cup olive oil
1 teaspoon garlic, minced
1 tablespoon ground cumin
2 cups cornbread, diced in 1 inch cubes
1 head romaine leaf, torn
2 avocados, peeled and quartered
2 tomatoes, quartered
1 small red onion, thinly sliced
1/3 cup parmesan cheese
Directions:
1. In a small bowl, combine the first 5 ingredients and whisk until smooth. Salt to taste.
2. In a large bowl, combine the olive oil, garlic, and cumin and mix well. Add the bread cubes and toss well to coat. Place cubes on a baking sheet and bake 350 degrees until crisp on the outside, about 10 minutes. Pour dressing over the romaine leaves, avocados, tomatoes, and onion. Toss to coat. Sprinkle with cheese and bread cubes.
