Easy make ahead breakfast, easy to warm and go.
Ingredients:
3 cups brown rice
5/8 cups southwestern egg beaters
1 large tomato, diced
1/4 cup red onion, diced
1/4 cup yellow pepper, diced
1/3 cup skim milk
4 oz mexican cheese, shredded
1/2 tsp black pepper
1/2 tsp cumin
Directions:
1. mix all ingredients.
2. cook at 400 for 15min. in muffin pans.
3. freeze individual servings and reheat in microwave for approx 1min.
