5-Ingredient Fix Contest Entry. This is a recipe that I made up myself. It works well for breakfast or as a side dish to tacos, burritos, etc. Serve with sour cream and salsa to really add zip!
Ingredients:
1 (20 ounce) bag simply potatoes® shredded hash browns
8 eggs, slightly beaten
1 (8 ounce) can diced green chilies
1 (8 ounce) bag shredded three-pepper cheese
1 large tomato, chopped
Directions:
1. Preheat oven to 350 degrees and grease a 9x13 baking pan. Mix together the eggs, diced green chilis and the cheese. Spread the hashbrowns in the bottom of the baking pan and pour the eggs mixture over them. Top with the chopped tomatoes. Bake for 45 minutes or until a knife inserted in the center comes out clean.
