Southwest Black Bean Salad

Great Southwestern Salad.
Ingredients:
1 lb southwest green chile sausage
3 cups black beans, cooked
1 cup red onion, chopped
2 anaheim chilies, roasted, seeded and diced
1 jalapeno, pickled, seeded and diced
1 cup cilantro, chopped
1 teaspoon cumin seed
2 tablespoons lime juice, fresh
1 tablespoon red wine vinegar
1 tablespoon djon mustard
1 teaspoon garlic, minced
1/2 cup olive oil
salt and pepper
Directions:
1. In a skillet over med. heat, fry the sausage for 5 minutes, breaking it up as it cooks. Put it into a large bowl with the black beans and remaining salad ingredients.
2. Dressing:.
3. In a small skillet, shake and stir the cumin seeds over med. high heat until they begin to smoke and give off a toasty aroma. Put them in a bowl or mortar and pestle to crush them briefly.
4. In a small bowl, add the lime juice, vinegar, mustard and garlic and gradually whisk in the oil. Taste for salt and pepper.
5. Pour the dressing over the salad and toss well.
