Southern Sweet Potato Biscuits

From North Carolina, a typical southern style sweet potato biscuit. Try butter flavor shortening for regular white shortening
Ingredients:
1 1/2 cups self-rising flour
2 teaspoons brown sugar
1/3 cup solid shortening
1 egg
1/2 cup mashed cooked sweet potatoes or yams
2 tablespoons milk
Directions:
1. In a bowl, combine the flour and brown sugar.
2. Cut in shortening until the mixture resembles coarse crumbs.
3. In another bowl, beat egg, then add sweet potatoes and milk.
4. Stir into flour mixture just until moistened.
5. Turn onto a floured board. Knead about 12 times or until smooth.
6. Roll dough to 1/2 -inch thickness.
7. Cut with a 2 1/2 -inch biscuit cutter. Place on an ungreased baking sheet.
8. Bake at 425 degrees for 12 minutes or golden
9. Note: As a substitute for self-rising flour, place 2 1/4 teaspoons baking powder and 3/4 teaspoon of salt in a 2-cup measuring cup. Add enough all-purpose flour to total 1 1/2 cups.
