Southern Summer Squash Casserole

baked or smoke honey Turkey, my family loves it with smoked turkey.
Ingredients:
2 cups sliced yellow summer squash
1 medium carrot, thinly sliced
1/2 cup chopped onion
1/2 cup diced red or green bell pepper
1/2 tsp salt
1/8 tsp black pepper
1/2 tsp cayenne pepper
1 can condensed cream of chicken or mushroom soup, undiluted
1 container(8ounces) sour cream
1 cup(4ounces) shredded italian cheese blend(fat free)
1 cup shredded cheddar cheese
1 pkg.(6ounce) stuffing mix
Directions:
1. Preheat oven to 350 degreeF. Combine squash,carrot,onion,bell pepper,salt, black pepper and cayenne pepper in medium saucepan; cover with water. Bring to a boil;cook 5 minutes or until tender; drain
2. combine soup and sour cream in 13x9-inch casserole; mix well. Stir in vegetable mixture and spread evenly. Sprinkle cheeses on top.
3. Top with dry stuffing mix. Bake, covered, 30 minutes or until heated through.
