Southern Style Smothered Pork Chops

This recipe starts with bacon and ends with pork chops... it doesn't get any better than bacon, onions and mushrooms slathered over super tender pork chops with gravy. I always serve this with mashed potatoes and of course something green just to round out the meal
Ingredients:
4 boneless pork chops
1 (1 1/4 ounce) package brown gravy mix
2 cups water
1 (4 ounce) can sliced mushrooms
4 slices bacon (chopped)
1/2 yellow onion (diced)
1 teaspoon garlic (minced)
salt
pepper
1/4 cup flour (for dredging)
Directions:
1. brown bacon in a large skillet.
2. remove and leave grease.
3. saute onion and garlic in bacon grease.
4. remove and leave grease.
5. salt and pepper both sides of the pork chops.
6. dredge both sides in flour.
7. add to hot grease (you may need to add a bit more oil to the pan).
8. brown pork chops on both sides.
9. in a seperate bowl combine gravy mix and water. add in the cooked bacon and onions.
10. pour over browned pork chops cover and let simmer 20-40 mins (or until pork is at the desired tenderness).
11. If the gravy is a little thin you can remove the chops and add a TBS of cornstarch or flour and whisk in until there are no lumps.
12. Serve with mashed potatoes and covered with gravy and DEVOUR!
