This creamy herb-veggie side-dish dates back to my days in Jacksonville Fl. It makes a great pot-luck side. I recently make this and the memories flooded back. Ahhh comfort food! Easy to make veggie.
Ingredients:
2 lb. fresh yellow squash, cooked and well drained
1 carrot grated
1 onion, chopped
2 tbsp. pimento, chopped
1 can cream of chicken soup ( i use mushroom)
1/2 pt. sour cream
1 pkg. herb stuffing mix
1 stick margarine, melted
Directions:
1. Cook squash, season lightly with salt and pepper.
2. Add the carrot, onion, pimento, soup and sour cream.
3. Pour melted oleo over the stuffing mix and mix well.
4. Add 3/4 stuffing mixture to the veggie mixture and put this into a buttered casserole dish.
5. Cover with the remaining stuffing mix.
6. Bake at 375 degrees for 25 to 30 minutes.
