Southern Shrimp & Simply Potatoes

Ready, Set, Cook! Special Edition Contest Entry: This recipe came to me from a friend and was originally served over grits. Since two of the main ingredients are butter and bacon (both of which love the potato) I thought it would be a natural fit for Simply Potatoes Contest. If I win, I'll be taking my girlfriend out for a night on the town!
Ingredients:
1 (12 ounce) package simply potatoes traditional mashed potatoes
1/2 cup butter
4 ounces goat cheese
1 lb shrimp, peeled and deveined
2 slices bacon, per serving center cut is best, chopped into small peices
4 teaspoons fresh lemon juice
4 tablespoons italian parsley, chopped
1 bunch green onion, chopped (the green and white parts)
2 large garlic cloves, minced
Directions:
1. In a large pan melt 1/2 the stick of butter and goat cheese together and add Simply Potatoes Mashed stirring until blended and warm. Set aside until ready to serve.
2. Rinse shrimp and pat dry. Fry bacon until just browned. Remove bacon from skillet and drain, retaining the bacon grease. Add shrimp to the bacon grease, if not enough grease to cover the bottom, add the other 1/2 stick butter. As shrimp begins to turn pink, add the rest of your ingredients, sauteing over medium heat, about 5 minutes.
3. Spread potatoes into the bottom of shallow serving bowls and pour shrimp mixture over the potatoes. Garnish with bacon. Enjoy.
