Southern Mountains Potato Salad

Ingredients:

6 russet potatoes, large - cooked, peeled and diced
4 eggs - hardboiled, peeled, and chopped
1/2 cup celery - diced
1 onions, medium - peeled, and minced
1/2 cup mayonnaise (a good brand please)
1/4 cup pimento - diced
1/4 cup sweet pickle relish
1- 1/2 tablespoon prepared mustard
1 teaspoon celery salt
1 teaspoons sugar
1/3 cup stuffed green olives - chopped (optional)
salt & pepper (if needed)
Directions:
1. Peel and dice the potatoes, cook, and cool.
2. Hard boil the eggs, and cool, peel and chop.
3. Peel onions chop fine.
4. Dice celery fine.
5. Combine the first 4 ingredients in a serving bowl, cover and refrigerate while preparing the rest of the ingredients for the dressing.
6. Blend the mayo, pickle relish, pimento, mustard, celery salt and sugar together.
7. Then pour over the potato mixture and toss.
8. Taste- Salt & pepper if needed.
9. Cover the salad and refrigerate for at least 1-2 hours for flavors to blend.
10. May garnish with olives, boiled egg, and fresh sprigs of parsley.
