Southern Corn Meal Flapjacks

Ingredients:

  • 1/2 cup flour
  • 1/2 tsp salt
  • 2 tsp sugar
  • 1 tsp soda
  • 1 cups buttermilk
  • 2 tbsp salad oil
  • note: give them a southwest twist by may adding a little niblet corn, green chilies, or onion

Directions:

  1. Combine flour, corn meal, salt, and sugar.
  2. Dissolve soda in buttermilk
  3. Add to corn meal mixture
  4. Add beaten eggs
  5. Add salad oil
  6. Mix well
  7. Cook on greased griddle or large iron skillet
