Southern Buttermilk Cornbread

Ingredients:
1 1/2 cups yellow cornmeal
1/2 cup all-purpose flour
1 1/2 cups fat-free buttermilk
2 tablespoons canola oil
2 teaspoons baking powder
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon baking soda
1/2 cup egg substitute
Directions:
1. Heat oven to 450 degrees.
2. Grease a 10-inch cast iron skillet.
3. Mix all ingredients. Beat vigorously 30 seconds.
4. Pour batter into pan.
5. Bake about 20 minutes, until golden brown.
6. Serve warm.
