Southern Ambrosia Apple Pie

This apple pie has the a la mode taste built in. Don't be intimidated by the number of ingredients. It goes together easily. I have eaten it without the topping and it's really great that way too.
Ingredients:
1/2 cup packed brown sugar
1/2 cup apple juice
2 tbsp butter or margarine
2 tbsp cornstarch
1/4 tsp salt
4 cups peeled, thinly sliced apples
t tsp lemon juice.
1 pastry shell, baked
1 egg
2/3 cup evaporated milk
1/2 cup sugar
1/2 cup flaked coconut
2 tsp vanilla
1 tsp cinnamon
pecan cream topping
1 8oz pkg cream cheese
1/2 cup sugar
1 tsp vanilla
3/4 cups chopped pecans
1 8 oz cool whip or whipped cream
Directions:
1. In a saucepan over medium heat bring brown sugar, apple joice, butter, salt and cornstarch to a boil.
2. Stir in apples and lemon juice; cook & stir over low heat until apples are crisp tender, 5-8 mins.
3. Pour into pastry shell which has been lightly baked.
4. In a small bowl beat egg, milk, sugar, coconut, vanilla and cinnamon; mix well.
5. Pour over apple mixture.
6. Bake at 350° for 40-45 minutes or until set.
7. Cool on wire rack.
8. For the topping, beat the cream cheese and sugar in a mixing bowl.
9. Stir in vanilla and pecans.
10. Fold in Cool Whip.
11. Spread over the pie.
12. Chill.
