~ Baked Fruit on the Grill~
Ingredients:
1/2 cup brown sugar,packed
1/4 cup butter,melted
1 teaspoon lemon rind,grated
2 tablespoons fresh lemon juice
1/8 teaspoon nutmeg
3 bananas
1 papaya
1 cup honeydew melon balls
1 cup cantaloupe balls
flaked coconut
Directions:
1. Combine brown sugar,butter,lemon rind,lemon juice and nutmeg in a bowl.
2. Cut bananas in halves crosswise and lengthwise.
3. Cube papaya.
4. Combine all fruit in a bowl.
5. Divide among 6 squares of heavy foil.
6. Sprinkle with brown sugar mixture and coconut.
7. Seal tight.
8. Place on grill,and grill for about 10 to 15 minutes,or until heated through.
9. Serve over slices of Pound Cake.
