this is an open-faced sandwich that can be eaten whole, or cut up into 4 to 6 pieces for a smaller lunch for everyone.
Ingredients:
2 lbs ground pork
1/2 cup onion, chopped
1 (1 ounce) envelope taco seasoning
1 teaspoon salt
1 (8 ounce) can tomato sauce
1 1/2 cups sharp cheddar cheese, shredded, divided
1/2 cup pimento stuffed olive, chopped
1 loaf french bread, unsliced
Directions:
1. In a large skillet, cook pork and onion until meat is no longer pink, drain.
2. Add taco seasoning, and salt.
3. Stir in tomato sauce, 1/2 cup cheese, and olives, and cook over medium heat for 5-10 minutes stirring occasionally.
4. Cut French bread in half lengthwise; remove center from each half to form a 1-inch shell.
5. Crumble removed bread to make 1 cup crumbs; stir crumbs into meat mixture.
6. Place bread shells on a baking sheet, toast lightly under broiler.
7. Fill with meat mixture and top with remaining cheese.
8. Tent loosely with foil.
9. Bake at 350 degrees Fahrenheit for 20 minutes, or until cheese is melted and filling is heated through.
10. Cut into slices.
