South of The Border Potatoes

Ingredients:
2 cups potatoes, chopped and peeled
2 tsp extra virgin olive oil
1/2 tsp chili powder
1/2 tsp coriander, ground
1/2 tsp cumin, ground
1/2 tsp garlic powder
1/2 cup roma tomatoes, diced
2 tbsp cilantro, fresh/chopped
2 tbsp green onions, sliced
1/4 cup salsa
1/4 cup non-fat sour cream
Directions:
1. Place potatoes and 1.5 cups water in 12 inch frying pan.
2. Cover tightly and bring to boil over high heat.
3. Simmer over medium until potatoes are tender when pierced (5-7 minutes).
4. Drain potatoes in colander and wipe pan clean.
5. To pan, add oil, chili powder, cumin, & garlic powder.
6. Stir over medium-high heat for 30 seconds.
7. Add potatoes, stir to coat, them mix in tomatoes, cliantro, and green onions.
8. Over high heat, occasionally turn mixture with wide spatula until browned (5-6 minutes).
9. Season to taste with salt and sprinkle with a little more cilantro.
10. Serve with salsa and sour cream.
