Ingredients:
2 lbs ricotta cheese, drained overnight
2/3 cup sugar
1/3 cup all-purpose flour
6 eggs
2 teaspoons orange zest
2 teaspoons lemon zest
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
2 teaspoons vanilla extract
Directions:
1. In a large bowl, stir ricotta cheese with a rubber spatula until creamy.
2. Add sugar and flour, mixing until blended.
3. Add eggs, one at a time, stirring after each addition.
4. Stir in orange and lemon zests, juice, cinnamon, and vanilla.
5. Pour into a greased 9-inch springform pan.
6. Bake in a preheated 300° oven for 75-90 minutes or until top of knife inserted in the center comes out clean.
7. Cool on rack for 2 hours.
8. Cover and refrigerate for at least 6 hours before serving.
