This recipe is taken from Mrs. Elliiott*s Housewife Containing Practical Receipts in Cookery by Sarah A. Elliott of Oxford, NC and published in New York in 1870. The 15 minute beating time for egg yolks called for was of course by hand, but with a mixer it would not take so long.
Ingredients:
1 dozen egg, separated
12 tablespoons sugar
1/2 pint brandy
Directions:
1. To make a gallon of egg nog, beat the yolks for 15 minutes then add the sugar and beat until they rise and are thick. The great secret of having it nice is to beat the yolks thick.
2. Whip the whites to a stiff froth, put half a pint of brandy in the yolks and sugar and when well mixed, stir the whites slowly in as well.
3. Have milk in a glass pitcher, to be added if preferred.
