South Beach Meat Loaf with Vegetables

Ingredients:
1 tbs olive oil
1 onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 lb ground beef
1/2 lb ground turkey breast
1 cup salsa
1 large egg, beaten
3/4 tsp salt
1/2 tsp black pepper
1 clove garlic, minced
1/2 cup cooked brown rice
Directions:
1. Preheat oven to 350F
2. Heat the oil in a small skillet over medium heat. Add the onion and bell peppers and cook for 5 minutes, or until tender.
3. In a large bowl, combine the beef, turkey salsa, egg, salt, black pepper, and garlic. Stir in the vegetables and rice. Place the mixture in a round baking dish and pat into an oblong loaf.
4. Bake for 45 minutes, or until a thermometer inserted in the center registers 160F and the meat is no longer pink.
