I am from Johannesburg South Africa. I remember eating these as a child and finally found the perfect recipe, brings me right back to my childhood! Sooooo good, but remember to serve them hot! Add a squeeze or 2 of lemon juice to the crepe before you sprinkle the mixture and roll it up, makes the cinnamon and sugar stick better. Delicious!
Ingredients:
2 cups cake flour
2 teaspoons baking soda
3/4 teaspoon salt
2 eggs, separated
1/2 cup oil
1 1/2 cups water
1 cup milk
1 tablespoon lemon juice, and
1/2 teaspoon lemon juice
cinnamon-sugar mixture (4 tbsp sugar, 1 tbsp cinnamon)
Directions:
1. Sift dry ingredients.
2. Whisk egg yolks, oil, water, milk and juice together.
3. Whisk egg whites till stiff.
4. Mix the egg mixture into the dry ingredients to prevents lumps.
5. Beat with electric mixer.
6. Fold in the egg whites.
7. Pour very thinly into a greased pan.
8. Cook until golden brown on one side.
9. Turn over until golden brown.
10. Sprinkle sugar and cinnamon on top and roll up.
11. Serve hot.
