Sourdough biscuits
Ingredients:
1 c unbleached white flour
1/4 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1/2 c unsalted butter or vegetable shortening
1 c sourdough starter
melted butter
Directions:
1. Sift together flour, soda, baking powder and salt.
2. Cut in the batter or shortening with a pastry blender or two knives until coarsely textured and reasonably well distributed.
3. Add the sourdough starter and mix gentlly.
4. Turn the dough onto a lightly floured board and knead about 10 times.
5. Pat the dough out into a rough rectangle and then roll it out with a rolling pin until it's about 1/2 inch thick.
6. Cut into biscuits in shape/size desired and place on greased baking sheet. Re-form scraps and roll out again to make more biscuits.
7. Cover and let rise about 30 minutes.
8. Preheat the oven to 425F.
9. Brush the tops of the biscuits with melted butter just before putting them in the oven.
10. Bake 7-10 minutes.
