2 eggs, divided
1/2 cup shortening
1 1/2 cups brown sugar
1 teaspoon vanilla
1/2 cup milk, sour
1 teaspoon baking soda
2 teaspoons cinnamon

1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon salt
3 cups flour
Directions:
1. Beat egg whites until stiff.
2. In another bowl cream shortening, brown sugar, egg yolks, and vanilla.
3. Cream for 5 minutes.
4. Add sour milk.
5. Sift the baking soda, cinnamon, cloves, ginger, nutmeg, salt and flour together; 1/2 cup nuts or raisins may be added to the dry ingredients.
6. Add the dry ingredients to the creamed mixture.
7. Beat for 2 minutes; fold in egg whites.
8. Pour into 2 layer pans that have been greased and lined with wax paper.
