Sour Cream Rice Pilaf

Ingredients:

  • 1/2 cup slivered almonds
  • 1 tbsp butter
  • 1 1/2 cups long grain rice, uncooked .
  • 1/3 cup butter
  • 2 tbsp grated onion
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 small bay leaf
  • 1 cup sour cream
  • 1 cup peas (optional)

Directions:

  1. Saute' the almonds in 1 Tbs butter in a small skillet until lightly browned, remove from heat and set aside.
  2. Combine the rice, chicken broth,butter,onion,lemon juice, salt ,pepper and bay leaf in a large saucepan. Bring mixture to boil; cover, reduce heat and simmer 20 to 25 minutes or until rice is tender and liquid absorbed. Do not lift lid ! Remove from heat. Remove and discard the bay leaf.
  3. Add the sour cream and mushrooms to rice mixture;stir well.
  4. Transfer to serving dish and sprinkle with almonds and fresh parsley.
  5. Serve immediately! Enjoy
