Sour Cream-potato Homestyle Biscuits

A great flavored biscuit!
Ingredients:
sour cream-potato homestyle biscuits
8 ounces cubed, peeled potatoes
1/2 cup low-fat buttermilk
1/4 cup low-fat sour cream
2 tablespoons butter
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
preheat oven to 450f degrees. place potatoes in medium saucepan and cover with water. bring to a boil, reducing heat and letting simmer for 15 minutes. drain and return potatoes to pan.
add buttermilk, sour cream and butter. mash until smooth with a potato masher.
combine flour, baking powder, salt and baking soda in a large bowl. add potato mixture and stir until just moist. turn dough onto lightly-floured surface and knead lightly four times.
pat dough to about 1/4 inch thickness and cut with a biscuit cutter. place biscuits 2 inches apart on baking sheet sprayed with non-stick spray.
bake for about 15 minutes or until golden brown. serve warm with butter blended with real honey.
