Sour Cream Pecans

Ingredients:

  • 1 cup sour cream
  • 2 cups sugar
  • 1 tsp vanilla
  • 1/4 tsp baking soda
  • 2 tbsp butter (not spread or tub product) or 2 tbsp margarine ( not spread or tub product)
  • 4 cups pecan

Directions:

  1. Combine sour cream and sugar.
  2. Cook over medium heat to 245F on a candy thermometer (almost hard ball stage).
  3. Turn off heat.
  4. Add vanilla, baking soda and butter (or margarine).
  5. Beat for 2-3 minutes.
  6. Add pecans, stirring to coat.
  7. Turn onto lightly buttered baking sheet.
  8. Cool and separate pecan halves.
