A light and tasty cookie looks wonderful on cookie trays.
Ingredients:
1/4 cup shortening
3/4 cup sugar
1 egg
1/2 cup sour cream
1/2 teaspoon vanilla
1/4 teaspoon nutmeg
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter
1/2 cup confectioners' sugar
1/4 teaspoon vanilla extract
3 -4 teaspoons hot water
Directions:
1. In a mixing bowl, cream shortening and sugar.
2. Add egg, sour cream and vanilla.
3. Combine dry ingredients; add to the creamed mixture.
4. Chill for at least 1 hour.
5. Drop by tablespoonfuls 2 inches apart onto greased cookie sheets.
6. Bake at 425 for 7-8 minutes until lightly browned.
7. Remove to wire racks to cool.
8. For frosting, melt butter in a small saucepan until golden brown; stir in sugar,vanilla and enough hot water to achieve a spreading consistency.
9. Frost cooled cookies.
