I headed a cookbook fundraiser for our school. It was a big hit. I sent a note home saying no toll house cookies only tried and true family recipes that you pass down and are known for. Before we know it each student did not just submit one. Read more . We had grandparents, aunt, friends, neighbors all posting in our book. It was a huge book that we sold for only 7 bucks and in turn everyone who put in a recipe bought one or more as well. This is a recipe that one of our teachers submitted. I have made this a few times and a few failures as well. This cake is touchy. But memorable once you eat it.
Ingredients:
cake
1/2 cup cocoa
3/4 cup boiling water
1/2 cup butter
2 cups sugar
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup sour cream
1 teaspoon vanilla
3 egg whites
chocolate icing
2 tablespoons cocoa
1 tablespoon plus 2 tablespoons water
1 tablespoon of vegetable oil
1 tablespoon corn syrup
1 cup 10x sugar (confectioner sugar)
Directions:
1. Mix cocoa in boiling water and set aside to cool.
2. Cream butter and sugar.
3. Then add cooled cocoa mixture.
4. Sift together flour, salt, and baking soda.
5. Add sour cream and vanilla alternate with dry ingredients.
6. fold in beaten egg whites (beaten to peaks, but not over done)
7. Bake at 350 degrees in a greased and floured 9 layer pan for 30 minutes.
8. Double recipe for 2 layers or for a tube pan (bake 1 hour)
9. This should be moist and fudgy. DONT OVERBAKE.
10. This cake is difficult to test.
11. I always double this for tube pan.
12. Chocolate icing:
13. This is for 1 cup of chocolate glaze.
14. Cook and stir all ingredients except the confectioners sugar (10x) over low heat until smooth.
15. Remove from heat. Beat in 10x sugar (confectioners sugar), You must dump it in all at one time.
16. Quickly, quickly stir and pour and spread out quickly on cake.
17. This dries to a tasty shiny fudgie surface. But when you add the sugar do it all fast and mix hard.
18. I use this icing over many cakes. It is soooo good. It is fudgie, shiny, crisp and so good
