Sour Cream Apple Pie With Oatmeal Cookie Crust

Oatmeal cookie crust filled with tender tart apples, with a sour cream topping baked right in the mix.
Ingredients:
pie crust
1 1/2 cups of raw rolled oats
1/4 cup of sesame seeds
1/2 cup of whole wheat flour
1/2 tsp of salt
1/2 tsp of cinnamon
1/4 cup of finely minced nuts
1/2 tsp of vanilla extract
1/2 cup of unsalted sweet butter, melted with
3 tbsp of honey
filling
5 cups of sliced tart cooking apples
juice and rind of one lemon
1/4 cup of light honey
2 tbsp of unbleached white flour
1/2 tsp of cinnamon
1/4 tsp of nutmeg
1 large egg
1/2 cup of sour cream
Directions:
1. Preheat oven to 375 degrees.
2. Combine all crust ingredients and mix well.
3. Press firmly and evenly into bottom and sides of a nine inch pie pan.
4. Combine apples with lemon juice and rind.
5. Drizzle in honey. Toss until uniformly coated.
6. Sift in flour and spices. Toss again to coat.
7. Arrange evenly in pie crust.
8. Beat egg and sour cream together.
9. Drizzle over the apples.
10. Bake 40 minutes in center of oven on cookie sheet, in case of spillover.
11. Serve hot or cold.
